You can't walk into a pub that serves meals in Australia that doesn't have chicken parmigiana on the menu. That's because they're so good!
Cooking Instructions

Heat a frying pan to medium heat and cook schnitzels in a little bit of evoo until golden and crispy. In meantime, preheat oven to 180℃

Once cooked, place on baking tray and spoon generous amount of tomato based sauce on top of each schnitzel, spreading it evenly as you go

Top with ham

Now top with the cheese
- 5
Place in the oven for 15 minutes or until cheese has melted and is golden.

Generally served with chips and salad or seasonal vege.

Love the gooey cheese and usually it’s accompanied by spaghetti or linguini I just used any pasta I used penne rigatoni which works just as well

This is the 2nd dish which I had served for the lunch event at The Simpler Living. I was browsing thru' my recipe repertoire for a suitable side after the egg and cheese dish, but couldn't find any. Somehow or rather, this dish just popped into my head. But Chef Oliver Glowig turned the dish into something elegant. Yes, this recipe is inspired by him. Now, the question is, can I take this to another level? I somehow thought of a way, which is by smoking the aubergine parmigiana while it is baking. I also added liquid smoke into the tomatoes sauce to give it that extra oomph.You must be wondering why smoking the dish? Chef Oliver Glowig uses a combination of fresh mozzarella, parmigiano and scamorza. Scamorza is a special kinda dried smoked mozzarella available in Italy. I can't find it anywhere here in Singapore, so I have to improvised. And I am glad to say that it turned out wonderful. I am not saying that mine is on par with Chef Oliver Glowig's, but this is the best version I have created so far. Why don't you give this recipe a try?

This is our take on chicken parmesan. It's not a classic, traditional recipe but it is delicious! We enjoy a combination of alfredo and marinara sauce for our recipe. The overall process is a little time consuming and involved...it takes a lot of multi-tasking...but it is so darn good. We usually save it for a weekend night when we have more time in the evenings. You may also have some marinara leftover (we usually do), but it can be refrigerated for another recipe in the next few days or it can be frozen.

I had these huge chicken breasts to cook but I find the big ones tend to be tough even after brining sooo....I split the whole breast then butterflied them. Still HUGE so I cut them through and beat the crap out of them. Easy but a little time consuming. In the end, perfectly fork tender though. I literally had to dig for ingredients. Weeknight chicken parm
What do you do when you're feeling under the weather, and yet have a craving for chicken parm? If you're me, you pop an extra cold pill, then brainstorm for ways to cut back the work required by the recipe. I came up with two ideas. First, cook the chicken entirely in the oven rather than the usual fry-then-bake, and zhuzh-up store-bought sauce instead of spending 30 to 45 minutes (or more) making homemade marinara. The biggest key to this admittedly lazy recipe was buying chicken breasts that were all about the same thickness. Breasts with differing thicknesses means you'll have to butterfly and/or pound them out, which defeats the purpose of an otherwise quick, no-fuss weeknight meal.

Lazy Eggplant Parm
I could never get down my grandmothers marinara sauce so I never made eggplant parm! But when I tried Emril Lagasse's garlic marinara sauce I immediately thought to make eggplant parm! It's soooooo good! The garlic in the sauce gives it so much flavor! The sauce is a little expensive so I only make this on special occasions!
