Ingredients

  1. 4 largeChicken breasts (pound thin for quick, even cooking)
  2. 2 cupItalian seasoned breadcrumbs (store bought or your own blend; I've done both)
  3. 1/2 cupGrated Parmesan cheese
  4. 2eggs
  5. 2 cupflour
  6. 1 lbSpaghetti noodles
  7. 1your favorite red sauce (homemade or store bought)
  8. 1cooking oil (enough to fill the bottom of a pan)
  9. 1shredded Parmesan or mozzarella cheese (optional)

Cooking Instructions

    Mix the breadcrumbs and grates cheese thoroughly.

    Put the flour, egg, and breadcrumb mixture in separate bowls.

  3. 3

    Pound the chicken breasts with a meat mallet until evenly thin.

  4. 4

    Heat up your favorite red sauce.

  5. 5

    Boil noodles.

  6. 6

    Put the oil in your frying pan over med/hi heat.

  7. 7

    Coat the chicken in the flour, egg, then breadcrumb mixture, shaking off the excess before each coating.

    Fry the chicken each side until golden brown.

  9. 9

    (optional) melt shredded mozzarella or Parmesan cheese over the chicken.

  10. 10

    Plate. (noodles, sauce, chicken, and more sauce if desired)
