Steps
- 1
Preheat the oven at 350°F/180°C. Mix the 20gms sugar and desiccated coconut and set aside.
- 2
Sieve flour, baking powder and bicarbonate soda.
- 3
Rub in butter/margarine until the texture becomes that of bread crumbs.
- 4
Mix in sugar and desiccated coconut.
- 5
Add eggs and coconut flavor(optional) and mix to a stiff dough.
- 6
Roll out and cut into shapes.
- 7
Dust the cut outs in the sugar and desiccated coconut mix and place in a lined baking tray. I used parchment paper to line mine. This is optional as you can bake them as they are.
- 8
Put in oven and bake for 15-20 mins or until slightly brown.
- 9
Remove from oven to cool and enjoy.
