Pui Shaak'er chorchori is basically a Bengali semi dry curry which is a medley of vegetables, that is cooked at low with a little bit of spices.
Steps

Cut and clean the shaak first, cut the leaves and then chop them, also cut the danta(tender stalk) approx 1 inch long pieces and slit them in between.

Cut all the vegetables as said above. Wash and keep them aside.

Now heat a Kadai, add mustard oil, temper it with panch phoron.

Then add begun,alu, kumro and danta of pui shaak,fry them.

Add turmeric powder, salt and sugar,stir well. Cover and cook for 5 minutes.

Add cumin powder, coriander powder, ginger powder and green chilli paste. Mix well cook for 2 minutes more.

Now add 1/2 cup of water into this. Mix, cover and cook on low flame.

When the veggies are half cooked add pui shaak.Mix thoroughly, cover and cook until all the veggies are done.

Your Pui Shaak'er Chorchori is ready to eat.
