Wanted to cook but confused since I haven't been to the market and the fridge is empty except for some tofu... hmm...
Browsing through my saved recipes, I found Egg and Tofu Stew by Susi Agung, perfect timing...
We always have eggs at home for spontaneous baking... haha
Without wasting time, I made this budget-friendly stew that's so flavorful... sweet, savory, as I love soy sauce... added more soy sauce... haha

Prepare the ingredients.

Sauté the lemongrass, galangal, and bay leaves along with the spice paste until fragrant.

Add the eggs and tofu. Add sweet soy sauce, season with salt, palm sugar, bouillon powder, and sweet soy sauce, mix well, and pour in about 1.5 cups of water or to your preference... whether you want it soupy or thick :)

Continue cooking until the water reduces, TASTE TEST. I didn't cook it for long, as I was in a hurry, haha. Hungry, I mean... hehe

Serve with warm rice, sambal, and crackers, yum!!

Don't forget to sprinkle with fried shallots :)

Easy and budget-friendly
If you like it sweet, just add more palm sugar or soy sauce... if not, reduce it... the recipe is flexible :)
