Manda Pitha(Rice Flour Dumpling)

Manda Pitha ( Rice Flour Dumpling) is a traditional delicacy prepared in odia homes in all parts of Odisha during festive occasions/events. The Pitha bears some similarities with modak of Maharashtra. The Pitha is basically steamed rice flour stuffed with a sweet filling made from grated coconut, sugar or jaggery.

The Pitha bears some similarities with modak of Maharashtra. The Pitha is basically steamed rice flour stuffed with a sweet filling made from grated coconut, sugar or jaggery.

For stuffing: Heat the pan and add 1 tsp ghee. Add coconut and sugar. Mix it well. Keep stiring and cooking till the mixture becomes dry. Turn off the flame and leave it to cool. Add cardamom powder and mix it well. Keep it aside.

For Pitha: Heat water in a deep pan on low medium flame. Add salt to the water. Slowly add rice flour and stir it continuously until you get a thick dough. Keep the dough in room temperature and knead it by adding one spoon oil to make it more soft.

Make 8-10 balls out of the dough by rolling them with the help of your palms. Flatten each ball and place the stuffing in it. Close the flattened balls after putting the stuffing and carefully give them a rounded or modak shape up to your choice.

Steam the stuffed balls (mandas) for 4-5 minutes in a steamer. Take them out and serve hot.
