Steps

Wash the brinjal, apply oil and roast it on gas on slow flame or can even roast in the oven.

When roasted, peel the brinjal and keep aside.

Chop the onions, crush the garlic and ginger. Chop the green chillies. Chop the coriander leaves.

Heat oil. Add jeera, hing. Let it crackle. Add the ginger garlic paste, add onions. Saute till golden brown. Add the tomatoes if wanted.

Add the dry masalas, salt. Mix well. Add the brinjal too. Mix well. Add the coriander leaves.

Serve hot with roti or rotla.
