Steps

Measure/ weigh all your ingredients. Sift the flour and set aside.

Prepare baking tin by greasing and dusting lightly with flour.

Preheat oven to 180°c

In a mixer bowl, cream sugar and Margarine until late and fluffy. About 5 minutes

Add in the eggs 1 at a time and beat till well Incorporated. This helps add more air to the batter.

Add the lemon rind, juice and essence. Beat for 20 seconds.

Using a spatula, fold in the sifted flour in bits until incorporated.

Pour into the prepared tin and put in the pre heated oven for 35 to 40 mins.

Check by inserting a skewer and if it comes out clean it's done, if not, bake for around 10 more minutes.

If it's done, remove and let it cool in the tin for about 10 mins.

Remove from tin onto a rack and let it cool completely.

Decorate or eat as is with a cup of something hot.
