Make 3 cuts in each eggplant,and keep garlic cloves inside eggplants.Grill baigan and tomatoes until they get soften.

Peel of burnt skin from both baigan and tomatoes. Separate out roasted garlic cloves and mash baigan & tomatoes.

Heat oil in a pan, splutter mustard, fenugreek, cumin and fennel seeds.

Add onion,ginger, green chilli,dried red chilli and curry leaves.Once onion changes colour add turmeric,red chilli,coriander powder,asafoetida and salt.

Saute for 2 minutes,then add mashed garlic,tomatoes and baigan.

Cover and cook for 5 minutes,garnish with coriander leaves and enjoy with hot chapatis.
