Ingredients

  • 500 gmmutton nite sized pieces
  • 1small onion caramelised
  • 1small onion finely chopped
  • 2 tbspginger garlic paste
  • 2 tspSalt (divided)
  • Green chillies slit(according to your taste)
  • pieceGinger -2”
  • 1/2 cupYougurt
  • 1 tspturmeric
  • 1 tspcoriander powder
  • 1/4 cupwalnut- soaked
  • Whole spices (green cardamom, black cardamom, cinnamon,cumin, star anise, cloves)

Steps

  1. 1

    Boil mutton with turmeric and salt. (you can save the stick for later use)

  2. 2

    In another pan add oil and all the whole spices, add chopped onion and sauté till it’s pink, add ginger garlic paste and slit green chillies. Cook till it’s raw smell goes away.

  3. 3

    Add coriander powder and sauté till oil separates.

  4. 4

    In a grinder add soaked walnut, yogurt and caramelised onion and grind into a smooth paste.

  5. 5

    Add this paste to the pan and cook for 5 minutes on medium to low flame. Add boiled mutton pieces and sauté on high flame. Add water according to your desired consistency of the gravy.

  6. 6

    Garnish with walnuts, caramelised onion,ginger Jullienns and coriander leaves.
