Grandma Pilar’s Gachas Tortas 😍

This recipe comes from Granada and my grandma Pilar (my father’s mother) taught me how to make it. She would gather the whole family together and cook these for us. I remember we ate them most often at my parents’ country house, our family meeting spot, where we’d spend hours talking and laughing at my brother’s jokes, sitting by the fireplace in winter or seeking shade under a tree in summer. We wouldn’t turn on the TV or use our phones, because that was our special family time. My dad would wake us up after long sleeps with a big smile and a beautiful song—he didn’t usually sing, only on those occasions, and I loved it because he looked so happy. My mom was always happy to have us all together. I remember she’d call us to say they were heading to the house, just in case any of my siblings wanted to join, and sometimes we’d even arrive before they did!
I got emotional telling this story, because my grandma, my brother, and my mom are no longer with us, but I wanted to share it because we had such beautiful family moments I’ll never forget.

In a skillet with a little olive oil, add the dried ñora peppers and cook until they darken, then set aside.

Peel and chop the onion, cut the green pepper into 3 or 4 pieces, and peel and dice the potatoes.

In the same skillet used for the ñora peppers, add the green pepper, onion, and potatoes with a pinch of salt. Sauté until lightly golden.

Using a mortar and pestle, crush the ñora peppers (cut them into pieces first to make it easier).

Place a pot on the stove and add 8 1/2 cups water (2 liters), salt, the crushed ñora peppers, green peppers, onion, potatoes, and the whole peeled tomato. When the tomato softens, remove it and mash it together with a little ground cumin and parsley.

Now make the dough. In a bowl, add a splash of water and the flour, and mix well until combined.

Sprinkle some flour on your work surface to prevent sticking.

Form small balls of dough and, using a rolling pin (dust it well with flour to prevent sticking), roll out the dough.

Gradually add small pieces of dough to the pot with the other ingredients and simmer for about 10 minutes. Adjust salt to taste.
