Ingredients

  1. 2 cupsshort brown rice
  2. 4 cupswater
  3. 2 tablespoonrice vinegar
  4. 1 tablespoonhoney
  5. 4carrots diced
  6. 2avocado sliced
  7. 1cucumber diced
  8. 1 bunchgreen onions diced
  9. 1 headleaf lettuce
  10. 4 sheetnori seaweed optional

Cooking Instructions

    I use a rice cooker, cook rice

  2. 2

    Tear lettuce leaves in half

  3. 3

    After rice is done cooking, mix with rice vinegar and honey

  4. 4

    Place a spoonful of rice on lettuce

  5. 5

    Top with all diced veggies, and wrap a small piece seaweed if you want

  6. 6

    Wrap lettuce around rice and veggies, serve with low sodium soy sauce, pickled ginger and wasabi

  7. 7

    I substitute Avocado for shrimp
