Ingredients

4 servings
  1. 1 lbboneless skinless chicken, diced (very small pieces)
  2. 2 tbspsesame seed oil, divided
  3. 1 canwater chestnuts, drained
  4. 1 tbspground ginger
  5. 1bell pepper, diced
  6. 1onion, diced
  7. 2 tbsprice vinegar
  8. 2 tbspteriyaki sauce, low sodium
  9. 3 tbspsoy sauce, low sodium
  10. 1/2 tspgarlic powder
  11. 1/4 tspred pepper
  12. 1 bunchgreen onions, sliced
  13. 1/2 cupshredded carrots
  14. 1/4 cuppine nuts
  15. 1-2 headsbibb lettuce

Cooking Instructions

  1. 1

    Heat 1 tbsp sesame oil, cook chicken until brown

  2. 2

    Add water chestnuts, ginger, bell pepper and onion. Cook and stir over medium heat until chicken is cooked through.

    Add rice vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper, green onions, carrots, and remainder of sesame seed oil to mixture. Cook and stir for a few minutes.

    Remove from heat and mix with pine nuts, spoon mixture onto lettuce.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
