Heat red oil in a pan, add blended tomatoes, bonnet pepper, ginger & garlic and saute. Add in seasoning & salt and the remaining spices. Add in onions. Cook sauce till oil becomes visible. Add the blanched apinach and stir, let it simmer a bit then serve.
