Cut the potatoes into small cubes, like you would for a Spanish omelette.

Add water to a pot with the potatoes and bring to a boil.

Add the diced ham and a pinch of salt.

When the potatoes are cooked, add the eggs and let them set.

Turn off the heat and add the mayonnaise, stirring well to combine.

In a separate bowl, mix the mayonnaise with the vinegar and a little water, stirring well until smooth. I used store-bought mayonnaise, but homemade is even better!
