Ingredients

Serves 4 servings
  • 2cooked and shredded chicken breasts
  • 1tomato, sliced into strips
  • 1onion, sliced into strips
  • 1garlic clove, sliced into strips
  • 2bay leaves
  • 2 tablespoonsoil (30 ml)
  • 1 cuptomato puree (240 ml)

Steps

15 minutes
  1. 1

    In a skillet, sauté the onion and garlic until softened.

    Add the shredded chicken and bay leaves, and cook for 1 minute.

    Add the sliced tomato and cook for a couple more minutes.

    Stir in the tomato puree and chipotle, season with salt and pepper, and let cook for a few minutes. Taste and adjust seasoning before turning off the heat.
