Ingredients

4 servings
  1. 350 gPasta
  2. 1 canroasted Eggplant
  3. 1 canpomodori (tomatos in juice)
  4. 4gloves of garlic
  5. 3hands of walnuts
  6. 2hands of pinenuts
  7. 4-5 tsp.Ras El Hanout (or self-made)
  8. salt
  9. olive oil or grapeseed oil
  10. chili

  1. 1

    Crush nuts with 2 gloves of garlic, so that you still have chunks and add Ras El Hanout. Fill in oil to get a nice mushy texture (not liquidy)
    (set water for pasta to boil)

  2. 2

    Fry and stir the nut-mix in a hot pan for 1-2 minutes, lower the temperature to a medium-low level and keep stirring for another 3-4 minutes.

  3. 3

    Add tomatos, last gloves of garlic and let fry for 10 minutes.
    (Cook the pasta)
    Add the Eggplant and keep cooking for another 10-15 minutes.

    Serve with some freh Koriander
