Baked Beef and Pork Meatloaf Roll

Mix the ground pork and ground beef together. Season with black pepper, garlic, salt, and grated onion. Gradually add breadcrumbs until the mixture holds together and doesn’t fall apart when shaped into balls.

Lay out a sheet of aluminum foil and spread the meat mixture into a thin, even layer, making sure there are no gaps and it doesn’t tear.

Add a layer of ham slices and then a layer of mozzarella cheese slices on top. Use the aluminum foil to help roll up the meat, keeping the foil on the outside to assist with shaping the roll.

Lay out another sheet of aluminum foil and arrange the bacon strips horizontally on it, using enough to match the length of the meat roll. Place the meat roll on top of the bacon, then use the foil to help wrap the bacon around the roll. Twist the ends of the foil to seal. Bake at 400°F (200°C) for 20 minutes to cook through.

After the initial baking time, open the foil to expose the roll and return it to the oven at the same temperature for another 10 to 15 minutes, depending on how browned you want it. Then, use tongs and a wooden spoon to carefully turn the roll so it browns on the other side.

Once you remove it from the oven, let it rest before slicing, as it may fall apart if cut immediately.
