You know I love to do the unconventional😃💃 and I love keeping it simple and fast. I was thinking of a very simple breakfast for my family and this is what I came up with. It's filling and my family loved it.

You know I love to do the unconventional😃💃 and I love keeping it simple and fast. I was thinking of a very simple breakfast for my family and this is what I came up with. It's filling and my family loved it.

Wash and slice the plaintain into desired shape and size, then deep fry until it's golden brown

Heat a sauce pan over medium heat and drizzle a tablespoon of oil to stir fry your onions, carrot for a few minutes add tomatoes, peppers, and a dash of oregano and then add your wine🍷. Don't forget to add salt and knorr to your taste. Allow to fry for five minutes

Boil your noodles and keep aside

Fry your chopped sausage for a few minutes and keep aside as well

Whisk the eggs in a big bowl, add your saute veggies, noddles and sausages and gentle fold or mix. Make sure to taste for salt and pepper

Lightly grease your baking pan (I used butter) and then pour your mixture and layer with your plaintain. Bake in the oven for 7-10 minutes.
