Ingredients

  • 2 cupsall-purpose flour
  • 4eggs
  • 1 cupsugar
  • 2 tspbaking soda
  • 2 tspbaking powder
  • 2 tspcinnamon
  • 1 tspginger
  • 1/2 tspsalt
  • 2 tspvanilla
  • 1 cupoil
  • 3 cupsgrated carrots
  • 1/2 cuppeanuts..crushed (optional
  • 1 handfulmixed fruits(optional)

Steps

  1. 1

    Mix oil, sugar,eggs and vanilla

  2. 2

    Sieve and Add flour, baking soda,baking powder, ginger, cinnamon into the wet ingredients and mix gently

  3. 3

    Add the carrots, nuts and mixed fruits.

  4. 4

    Bake on 180 for 30 min or until ready
