Steps

Take maida, rice flour and rava in a wide bowl. Add in ghee or oil. Add in salt and mix well

Add in asafoetida, chopped onion, curry leaves, coriander leaves, green chilli and ginger

Mix well without adding any water. Leave it for 10 minutes

After 10 minutes sprinkle water little by little and prepare a hard and stiff dough

Take a thick plastic sheet and grease it with oil. Take a lemon sized dough.

Now grease your fingers and make the dough flat or a circular shaped maddur vada.

Take a wok or frying pan and put the oil for deep frying. Once the oil is hot, drop the flattened dough carefully into the oil.

Fry maddur vada or maddur vade one by one in medium flame in order to get crispy vadas.

Serve them with coconut/peanut chutney and tea.
