Cream the butter and sugar till pale and creamy

Add beaten eggs and vanilla essence, continue mixing.

Pour in the flour a little bit at a time as you mix till cometely incorporated

Gather the mix together onto a parchment paper and make a rough log shape. The mix ia still a little bit soft at this point so wrap and chill for 30 min.

By now the mix is a bit firmer so roll the rough log into a more even log shape and return to the fridge till completely firm est. An hr.

Cut the cookie dough log into slices using a sharp knife and arrange on a baking pan. Spacing them out.

Preheat oven to 160 and bake your cookies for about 15min. Take them. Out when the edges have just started browning and when you press the sides of the edges it is firm and not soft.

Remove from baking pan and let them cool.

Cookies can last for a week but you can freeze cooked cookies for up to a month. You can also freeze the raw cookie dough for a month and whenever you need fresh cookies you just slice it up and throw in the oven.
