Avocado & Kimchi

Avocado goes so well with Japanese seasonings such as Soy Sauce, Wasabi, Japanese Mayo, ‘Ponzu’, etc. Do you know it goes well with Kimchi, the Korean salted & fermented veggies? I had a jar of Wombok Kimchi in the fridge, but it had turned quite sour. I usually cook sour Kimchi, but it was hot and I didn’t want to cook anything. So I mixed it with Avocado, and added some Sesame Oil and Sugar to soften the sourness. It turned into a delicious side dish!

Ingredients

2 to 3 servings
  1. 1/2 cupKimchi
  2. 1Avocado *cut into small pieces
  3. 1/4 teaspoonSesame Oil *for flavour
  4. 1/8 teaspoonSugar *optional
  5. 1 tablespoonToasted Sesame Seeds
  6. 1Spring Onion *finely chopped

Steps

  1. 1

    Cut Kimchi into the size that is easy to eat. Place all ingredients in a bowl and mix to combine. *Note: Sugar is optional. I add it when Kimchi is sour.
