  • 2salmon fillets
  • 2potatoes
  • 1onion
  • extra virgin olive oil
  • salt
  • parsley
  • thyme
  • white wine

  1. 1

    Peel and slice the potatoes into 1/4-inch thick rounds. Slice the onion into thin strips and place everything in an oven-safe glass dish. Add salt and olive oil, then bake at 350°F for 20-30 minutes.

  2. 2

    With about 5 minutes remaining, season the salmon with parsley and thyme, and quickly sear it in a pan, leaving the inside raw.

  3. 3

    When the time is up, open the oven, place the salmon on top of the potatoes, and add a splash of white wine for flavor.

  4. 4

    Return it to the oven for about 5-10 minutes (watch to ensure the salmon doesn't dry out). Once the inside is cooked, remove and serve.
