Wash your offals very well,and cut into tiny chunks of yor choice,and twist the intestines.

In a pot add your offals(dnt add water at all) chop onion nd smash them in mortar(turmi) add garlic and fresh ginger nd smash them all together.

Pour the smashed onion mix unto the ofals,turn on heat nd close with a lid,after it start to brew (u will see water emerging from it) let it continue cooking for like 30 mins.

After 30 mins(cut the intestines into small strips),add smashed scotch bonnet, chopped mint leaves,seasonings to taste and thyme,turn it in using a spoon, nd close lid.

After like 10 mins,taste to ensure all is ok,then add ur locust powder(optional) and curry, then lastly add spring onion stir nd close again reduce heat to midium to let is slow cook,when it is finally cooked turn off heat nd let it.

Now peel your sweet potatoe,cut in ur desired shape nd wash well, sieve and add little salt and fry on hot oil till ur desired colour is achieved.

Serve with your hot spicy ofals peppersoup en enjoy.

Note if there is need for you to add water add,i personally did not add water at all.
