Ingredients

  • 4chicken quarters
  • 2 tbspolive oil
  • 2 tbspflour
  • 1 1/4 tspsalt
  • 1 tsporegano
  • 1/2 tspground pepper
  • 12 ozfresh mushrooms, sliced
  • 1large pepper, chopped
  • 3/4 cupchopped onions
  • 14 1/2 ozcanned tomatoes
  • 1/2 cupwhite wine
  • 1 tbspchipped fresh flat-leaf parsley

Steps

  1. 1

    Remove skin from chicken and trim visible fat.

  2. 2

    Heat oil in a large pan in the oven for 2 minutes.

  3. 3

    Combine flour, 1 tsp salt, oregano and pepper in a large Ziploc bag. Add chicken pieces, tossing to coat well with the mixture.

  4. 4

    Arrange chicken on hot oil in the pan and bake for 20 minutes.

    Stir mushrooms, pepper and onions into the pan with chicken. Bake for 15 more minutes, stirring once.

    Add tomatoes with their liquid, wine and remaining 1/4 tsp salt, breaking up tomatoes with a fork.

    Broil for 10 minutes.

    Sprinkle with chopped parsley.
