This soup/sauce is perfect for pairing with rice. You only know that when you ate it once.

I learnt this recipe from my beloved mum. This sauce had turned out to be the favorite sauce to pair with rice for everyone among the family. Pasta, couscous, yam and potatoes can also go with the sauce.

You can make it in less than 30 minutes, with everyday ingredients. Plus the spices giving that aroma and blissful taste. You can use any spice of your choice. Trust scotch bonnet and spinach! They go together with or without spices. Enjoy!

Ingredients

  1. Spinach
  2. Palm oil
  3. Onions
  4. Scotch bonnet
  5. Tomatoes
  6. Cooked fish
  7. Salt and seasoning
  8. Curry powder, ground cardamom, coriander and blackpepper
  9. Crushed garlic

Steps

  1. 1

    Grate scotch bonnet, onions and tomatoes using a grater. Or use a blender to blend it lightly

  2. 2

    Melt palm oil in a pot, add the grated stuffs

  3. 3

    Fry lightly, stirring. Add little water. Add fish and all the spices.

  4. 4

    Allow it to cook for 10 minutes. Add more onions(sliced). Add plenty of spinach. Enough to completely cover the stuffs. Turn lightly, allow it to cook for 5 minutes.

    Do not overcook spinach. Otherwise you would loose the vitamins from the vegetable. Remove from heat and serve with rice, pasta and what have you
