In winter season lots of vegetables are available in market. So we can make different types of pulao. But my favorite is this type of sweet pulao with lots of veggies and dry fruits also. This type of pulao goes well with all types of curries but I like this pulao with gobi matar ki sabji.

Steps

Preparation of sweet pulao: First of heat a pressure cooker and put ghee in it. Then roast the cashew nuts and raisins and keep them aside.

Then in the same ghee add all the whole spices and saute for 1 minute till a nice aroma will come.

Then add the chopped vegetables in it and saute it for sometime and then add rice and also saute it for sometime(2 minute).

Then add water, salt, sugar in it and cover the lid and cook it for 1 whistle in medium flame. Switch off the flame and let the pressure cooker release the gas automatically.

Now your sweet pulao is ready.

For the gobi matar masala: First of make the masala paste by grinding all the ingredients.

Heat a pan and put half of the oil in it and then fry all the cauliflower florets and potatoes in it by adding listlessly, turmeric powder and chilli powder in it and keep them aside.

Then in the same pan put the remaining oil and then add sugar in it. When the sugar gets caramelize then add the chopped onion in it and saute it till it becomes translucent.

Then add the masala paste along with the remaining masala powder and salt and cook it for sometime and then add chopped tomato in it.

When the tomato gets slender then add the fried vegetables and green peas on it and cook it for sometime.

Then add water and cover the lid for sometime and when it becomes little thick gravy then switch off the flame.

Add some chopped coriander leaves. Now your gobi matar masala (in odia style) is ready to serve. Serve hot with the winter special pulao.
