Ingredients

  1. 1medium yellow onion, peeled
  2. 1 (12 oz)can coconut milk
  3. 3 cupsall purose flour
  4. 1 tbspsalt
  5. 1 tspcayenne
  6. 1 tbspblack pepper
  7. about 1 qt oil for frying

    Cut your onion into really thin "strings". You can either use a knife. If using a knife make sure you use a really sharp one. You can tell the cut is thin enough if you can see the knife through the onion

    Or use a mandoline if you have one handy. Be careful with the mandoline! One slip and you could lop off a good chunk of a finger. I know thos from experience, possibly and experience while cutting onions for onion strings
    ..... Right now I'm typing this with my index finger. I'm nust saying

    Combine onion and 1 can coconut milk in a ziploc bag. Marinate for an hr.

    Mix the dry ingredients in a bowl. In small batches throw some,onions in the flour mix to coat.

    I used a spider (mesh spoon) to sift the onions out of the flour and it also removes the excess flour if you shake it around.

    Fill a cast iron pan with about 2-3 inches of oil. Heat over medium heat. You can see if the oil is ready by throwimg a little breading in there. If it starts bubbling and jumping around you're good to go.

    Once you've breaded about two handfuls of onions throw them into the hot oil. Well don't throw, drop carefully. We already lost one finger to this recipe. Lets not give you first degree burns. Anywyays, don't wait until you finish breading all the onions to fry them, theyll start to make one big mass of dough covered onions.

    You're only gonna fry for about 30 seconds, until golden brown.

    Remove the strings using a spider pr slotted spoon. Place on a paper towel covered plate. Rinse and repeat until you've made all the onion straws
