Pan Grilled Chicken

Iam always looking for ways to make broiler chicken tasty and cruchy before I stew it or toss it in souce. This was my intention on this particular day but it didnt happen because my son ate away more than 1/2 of the chicken pieces and I was left with nothing to stew.
This was an accidental recipe, I used only 2 ingredients!! but the outcome was tastiest chicken ever.

Clean your chicken and cut into pieces.

Mix the pieces with salt and place on a non stick pan

Place pan on the stove on medium and let it cook slowly, turning occassionally so that it doesn't stick to the pan. I used a charcoal jiko with closed door to regulate the heat.

Let the water from the chicken come out and cook till it becomes dry, and starts to cook in its own fat.

Continue flipping the pieces and occasionally draining out the fat from the pan if it becames too much.

Cook to a crispy brown texture and check to make sure chicken is cooked all way through and has no bloody or red parts left.

Remove from heat and serve. This can best be taken with ugali and kachumbari. Or by itself as a snack.
