Cut the salmon in strips or in pieces if you prefer. If the piece you have has skin you can cut it with 1 to 3mm of salmon and set it aside for later.

Break the egg in a bowl and mix. Submerge the pieces of salmon in the egg and later in the bread crumbs. Set them aside. I used already seasoned bread crumbs.

Put 5mm of oil in a pan. Once it's hot put the pieces of salmon. Turn them around once in a while. Then put them in a plate with a napkin to absorb the oil.

If you had the salmon skin you can put it in the hot oil. You can wait till its crunchy or just when it's cooked. I like it just cooked.

Cut the spring onion and mix it with the cream cheese. Put inside bowl and set the fingers in the borders for presentation. Put the salmon skins in another bowl. Eat them with crackers, bread or throw in salad.
