Mung bean & edamame pasta with sauce

Bring pot of water to boil for the pasta

Peel then chop shallots in half then into 4

Add shallots to a pan with hot oil and salt to fry off

Dice a clove of garlic and add to shallots in pan

Halve the tomatoes then chop into slices. Add to the pan

Reduce heat on the sauce once the shallots are golden brown
- 7
Boil the pasta for 7-8 minutes while the sauce reduces

Add 1/2 lemon juice to the sauce
- 9
Drain the pasta when cooked and serve with sauce. Sprinkle torn basil leaves and another 1/2 lemon juice over before eating
