Wash and disinfect all the vegetables. Set aside.

Shred the cheese and set aside.

Remove the seeds from the peppers and cut them into strips, and slice the onion into thin julienne strips.

Slice the mushrooms thickly.

In a little oil, sauté the onion, peppers, and mushrooms. Watch the cooking point.

Spread a tortilla with a little beans, add some of the sautéed mixture, and sprinkle with shredded cheese.

Roll it up into a thick taco shape and place it on a griddle, turning occasionally to avoid burning.

Place on lettuce and enjoy!
