Just like every working mum, I find it stressful having to make akara for my kiddos as breakfast, moreso, when they love akara. (y'all know the gist). It also doesn't help that using powdered bean tastes different and is usually tough. I found a solution! 😀

Just like every working mum, I find it stressful having to make akara for my kiddos as breakfast, moreso, when they love akara. (y'all know the gist). It also doesn't help that using powdered bean tastes different and is usually tough. I found a solution! 😀

Place the powdered bean in a deep bowl

Add the pepper, diced onion and salt
- 3
Make a well in the middle of the flour and gradually add the water while moving with a spoon

When your batter is pasty, switch the spoon for a hand mixer on medium speed for five minutes

The hand mixer is required in order to incorporate air into your batter and make it fluffy. If there's no available hand mixer, a mortar and pestle will do a good job of it too.

After beating the batter, add a bit more water so that the batter is more runny than pasty. But not too runny.

Drop table spoonfuls of the batter into heated oil and fry until golden brown

Enjoy with pap, custard or any other beverage of choice.
