Ingredients

  • 500 gbaby new potatoes halved
  • 250 ggreen beans trimmed and halved diagonally
  • 2red chilies seeded and diced
  • 1 clovegarlic crushed
  • 1/4 cupchopped fresh coriander
  • 1 tablespoonred wine vinegar
  • Halfteaspoon caraway seeds

  1. 1

    Cook potatoes in a large pan of gently simmering water for 20 minutes until tender, but still firm; drain and set aside.

  2. 2

    Blanch the beans in boiling water for 2 minutes or until bright green and just tender; drain beans and set aside.

  3. 3

    Pour over the dressing and stir for 2 minutes or until well combined.

  4. 4

    Serve salad hot or cold.

  5. 5

    Pour the dressing over no more than this 5 minutes before serving otherwise the salad will get discolour
