Rocky Road Brownies

I came across this recipe a few years ago when my Culinary class had to enter a dessert in the Loy Lake Creative Arts Show to be judged. I received a blue ribbon on this dessert! So IN YOUR FACE to the girls in my class that turned their nose to my chocolate creation, saying how "old people don't like chocolate. They like weird cakes with fruit in them". Yep, I'm sure your blueberry lemon cake was great and all, but never talk bad about chocolate!!
It's so yummy, that sometimes, I make just the brownie recipe! Sometimes, even the brownie recipe with cheesecake filling on top! Yumm!

Original recipe calls for 1 (4-oz.) unsweetened chocolate baking bar, chopped instead of the cocoa powder and oil, but it's how I've always made it, haha.

Steps

  1. 1

Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 6 to 8 minutes or until lightly toasted and fragrant.

  2. 2

Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 to 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in sugar and eggs until well blended. Stir in flour. Spread batter into a greased 13- x 9-inch pan.

  3. 3

Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Sprinkle warm brownies with toasted pecans and marshmallows.

  4. 4

((Chocolate Frosting)) Cook first 3 ingredients over medium heat in a large saucepan, stirring constantly, 4 to 5 minutes or until butter melts. Remove from heat, and beat in powdered sugar and vanilla at medium speed with an electric mixer until smooth.

  5. 5

Pour over pecans and marshmallows; spread to edges. Let cool 1 hour on a wire rack. Cut into squares.

Baking holds a special place in my heart. The kitchen was always a warm place where you poured you love into food that would nourish and delight your family. Many of my fond memories of my grandmother were in the kitchen making everything from biscuits in a can to our Banana Pudding and Texas Sheet Cake. And I'm here to spread the love and smother y'all with some home baking. Will be sharing my favorite recipes, some from home, some I found, all delicious! Hopefully, I'll find some too!
