Ingredients

1 hour
  1. 2.2 poundsground sierra or chula fish (about 1 kg)
  2. 2.2 poundsripe lemons, more yellow than green (about 1 kg)
  3. 5tomatoes
  4. 1large white onion
  5. 2serrano or habanero peppers
  6. as neededCilantro,
  7. Salt, to taste

    Place the fish in a large container. Add salt and finely dice half of the onion, then add it to the fish. Cut all the lemons and squeeze the juice over the fish. Mix well to combine the salt and onion. Cover and let it sit for about 1 hour.

    Meanwhile, finely chop the other half of the onion, the tomatoes, cilantro, and peppers. Place them in another large container, as you will add the fish here later.

    After an hour, check that the fish is 'cooked' by the lemon juice. Squeeze out all the lemon juice from the fish using your hands, a strainer, or a clean kitchen towel. Add the drained fish to the chopped vegetables. Mix everything together and adjust salt to taste.

    I make this when we go to the beach or when it's really hot and we want some cold beers. Serve with tostadas, ketchup, and hot sauce—it's delicious!
