In a bowl using your hands mash the beef with the baking soda and let it sit covered on the counter for 30 minutes.

Next, in a small bowl stir together the hoisin sauce, soy sauce, tomato puree, sesame oil, sugar and red pepper flakes. Set aside for the time being.

After allowing the beef to sit for its 30 minutes. Heat a pan or wok with the vegetable oil over a high to medium heat. Brown the beef stirring frequently and breaking up any large chunks with the spoon for about 5 minutes.

Add the garlic, ginger and light part of the spring onions. Cook until softened.

Next the hoisin sauce mixture and continue to cook until the beef is well coated and cooked through for about a minute or so.

Taste and adjust seasoning if necessary.

Stir in the dark part of the spring onions, and spoon into bowls then top with sesame seeds, the grated and the shredded vegetables.
