I wanted to gift the children a special fruit cake without alcohol so I opted out for this simple but totally rich non alcoholic fruit cake. This cake was rich in love, fruits and every other thing you can think of. It was sweet, yummy, super moist and just.mdlts in the mouth.

Ingredients

1 hour
6-12 servings
  1. 2 cupsflour
  2. 1 1/2 cupsugar (1 cup white sugar and half cup brown sugar)
  3. 3/4unsweetened coco powder
  4. 11/2 teaspoonbaking soda
  5. 1 teaspooncoffee
  6. 1 cupbutter milk
  7. 1/2 cupveg oil (I used power oil)
  8. 2large eggs
  9. 2 teaspoonvanilla extract (optional)
  10. I cup boiling water
  11. Assorted dried fruits soaked in orange juice for a week

    Sieve the flour, sugar, coco podwer, baking soda, baking powder, salt, and coffee into a bowl, then whisk to combine well.

    In another bowl, add eggs, vegetable oil, milk, vanilla extract and mix them.well...pour into the bowl with the dried ingredient, and mix well. Next carefully pour in the boiling water to cake be her and mix well to combine. The water helps the batter to become light in texture.

    Lastly, pour in the mixed fruit soak in orange juice into the batter and give it a good mix.

  4. 4

    Carefully butter up your baking pan, 9 or 8inch and afterwards, dust with flour, beat out any excess flour... pour in the battery almost half way...you can pour in the remain better into cupcakes pans...

    Baked in an already hot over for 40mins. I baked mine with water in another pan, to ensure the heat from the oven does dried out the cake and it worked like magic

    Bring cake out and let it rest for 10mins, before you remove from pan and set it on a baking tray to cool properly. The orange juice help the fruit release its flavour and kinda of give the cake that extra richness in taste. 😋🥛

    This cake goes well with a warm glass of milk or hot chocolate. 😂😁😍🤗
