Ingredients

  1. 4smoked fish fillets - haddock, cod, hake etc
  2. 10 tbsplight coconut milk
  3. 4 tspfish sauce
  4. 3 tsplime juice
  5. 2 tspgolden syrup / brown sugar
  6. snall bunch fresh basil, sliced
  7. 2 tbsplemon thyme leaves
  8. small bunch fresh coriander, chopped
  9. 1kaffir lime leaf, chopped
  10. sprinkle paprika and black pepper to season

Cooking Instructions

    Preheat the oven to gas 6 / 200C / 400 F

  2. 2

    Set out 2 squares of foil and spray lightly with oil. Place 2 fish fillets on each square and shape a lip around them like so

    Mix together the coconut milk, syrup / sugar, fish sauce and lime juice then pour over the fillets

  4. 4

    Scatter over the fresh herbs, paprika and pepper

  5. 5

    Fold the foil in at the top and bottom, then bring the sides over and place on an oven tray

  6. 6

    Bake for 18 minutes then open carefully and baste the fish

  7. 7

    Serve with a nice green salad
