Cooking fish in foil isn't anything new and I have other versions posted but I like to use a variety of different flavourings
Cooking Instructions

Preheat the oven to gas 6 / 200C / 400 F
- 2
Set out 2 squares of foil and spray lightly with oil. Place 2 fish fillets on each square and shape a lip around them like so

Mix together the coconut milk, syrup / sugar, fish sauce and lime juice then pour over the fillets
- 4
Scatter over the fresh herbs, paprika and pepper
- 5
Fold the foil in at the top and bottom, then bring the sides over and place on an oven tray
- 6
Bake for 18 minutes then open carefully and baste the fish
- 7
Serve with a nice green salad

This is my updated version of this dish made the way my family enjoy it. Initially, 'Skink' referred to a type of broth made with the scrapings of beef from the front legs of cattle. Hard times in the North East of Scotland in the early 1890s left people unable to buy this product. By this time, Cullen Harbour had become the thriving centre of herring fishing and the village also specialised in the production of smoked haddock. With many families in the local villages having a fishing background, they turned to the smoked haddock which was in plentiful supply. This twist on a tuna & sweetcorn topping for a baked potato is a great idea for lunch. There are many names for these - Puff Candy, Cinder Toffee, Honeycomb, Seafoam, Divinity....but Cadburys coat it in chocolate and call it Crunchie! You can use corn syrup instead of the golden syrup if you can't find any but I do have the recipe for golden syrup posted. You could also use honey but I find it makes the bars even stickier!
