Sweet and Spicy Caramelised Onion grilled cheese sandwich

This is a classic sandwich recipe that you can make when you’re confused as to what to use for the filling. When you crave something spicy as well as sweet in your sandwich this is the one to make! This sandwich tickles your taste buds and makes you want to eat more of it! The texture of the caramelised onions work well with gooey melted cheese. I’ve used only 1 cheese slice per sandwich here. But if you want the perfect grilled cheese use 2 as I’ve mentioned in the method.
Perfect combo with chai or coffee. Can be had as breakfast or dinner too. No ketchup or chutney needed for sides.

Steps

In a non-stick pan add the butter. Let it melt.

Now add the onion slices. Fry on medium-high flame for 2 mins.

Add the sugar, salt and pepper. Mix well.

Add the cinnamon powder. Continue to fry for 2 mins. Cover with lid and cook on low flame for 2-3 mins or until onions turn crisp and brown.

Apply butter onto a slice of bread. Place one cheese slice over it.

Divide the prepared caramelised onions into 2 halves. Place one half into the cheese slice.

Place one more cheese slice on top (optional). Cover with another bread slice that is buttered well.

Grease a grill toaster and place both sandwiches on it with butters side facing up. Grill them for 3-5 mins or as mentioned in your toaster settings.

Once done cut sandwiches into 2 triangles. Serve hot immediately. This tastes great without any ketchup or chutney as it is sweet and spicy by itself.
