Steps
- 1
Add dry ingredients into a bowl I.e sugar, salt, flour, baking powder
- 2
Add wet ingredients into a separate bowl I.e. oil, milk, egg, then whisk well.
- 3
Add wet ingredients to the dry ingredients, mixing well until there is no lumps.
- 4
Put stove on lower heat and put a small saucepan preferably non stick pan to heat gently with a bit of butter or oil, a teaspoon or less is sufficient to yield flapjacks which are not oily and ensure they wont stick.
- 5
At this step you may use a circular egg mould which can be sprayed with non stick spray and place in center of the pan then add 3 tablespoons of batter to yield perfectly round pancakes, or you may just spoon 3 tablespoons of batter in the center of the pan.
- 6
You will start to see bubbles once the pancakes are cooking at this stage you may remove the egg mould and flip them over to cook on the other side till they are golden and lacy.
- 7
🌟Chocolate chip variation. Simply just add chocolate chips in immediately on top of the batter after spooning batter into the pan. Press slightly on chocolate chips to push it a bit into the batter and then flip once you see the batter bubbling.
- 8
🌟Coconut and apricot jam variation. Simply just sprinkle desiccated coconut or coconut flakes on top of the batter, immediately after spooning in the batter into the pan. Then flip over once the batter starts bubbling. Add apricot jam in between layers of flapjacks as a tart but sweet filling.
