Wash and Grate Carrots and keep aside.Dissolve jaggery in one cup water.

Soak Rice in Water for an hour or so.Microwave grated carrots for three minutes.Boil rice and keep aside.

In a pan add ghee and when ghee melts add fennel seeds,cloves and melon seeds.Add grated coconut and sauté for few seconds.

Now add nuts and sauté.Add carrots.Add cardamom powder.

Add dissolved jaggery,mix well.Add boiled rice and mix very lightly.Keep some quantity of boiled rice aside.

Cover the pan with lid and keep on very low flame for about five minutes to get merge into all flavours.

Now take plain boiled rice and add different colours separately by dividing the rice.Mix the coloured rice into the prepared rice and mix very lightly.Serve hot by adding more dry fruits.
