Steps

Rinse and drain the spinach leaves/palak. Boil in hot water for 5 minutes. Strain it and make a puree of spinach leaves.

Mix atta, ajwain and salt in a bowl and add the spinach puree in it. Add water as required and make a dough. Do add a pinch of oil as well to the mixture. Separate the dough into small balls.

Roll the dough into a round shape and and put ghee on both sides. Put it on a gridle/tawa and cook the paratha for 1 minute on either sides or until it turns crispy.

Serve it with curd or tomato chutney
