Spring has arrived, and today we're adding a splash of green to our tables with a beautiful asparagus lasagna made with freshly picked asparagus.

Spring has arrived, and today we're adding a splash of green to our tables with a beautiful asparagus lasagna made with freshly picked asparagus.
Cooking Instructions

Separate the asparagus tips from the stalks and boil them in salted water separately. (The tips cook faster as they are more tender). Once tender, blend the stalks.

Add the béchamel sauce and asparagus tips to the mixture. Mix everything together.

Take a baking dish, add some butter and a bit of the cream, then layer the lasagna noodles and in order: cream, speck, cheese, and Parmesan. Repeat the process for as many layers as you like (I make 3).

For the final layer, arrange in order: lasagna noodles, cream, cheese, the remaining asparagus, and a generous sprinkle of Parmesan.

Bake in a fan oven at 200°C (about 390°F) for 20 minutes (do the fork test).

Let it rest for a few minutes, then serve.
