Place the turkey breast in a zip-top bag with the brine. Let it sit for 1 hour.

Mix the spices and olive oil together.

Pat the turkey breast dry with paper towels. Rub the spice mixture all over the surface.

Insert a meat thermometer probe into the center and place the turkey in the slow cooker (set a rack at the bottom and put the meat on top).

Set the slow cooker to 149°F (65°C) and cook until the internal temperature reaches 149°F (65°C).

Remove the mesh net and wrap the turkey in plastic wrap. Refrigerate for about 16 hours.

After chilling, you can slice it with a meat slicer...

Or slice it by hand.

Serve warm if you like, drizzled with extra virgin olive oil and a sprinkle of sweet paprika on top.
