Slice the bolillo rolls in half horizontally. Melt the butter in a skillet over medium heat, then toast the cut sides of the rolls until lightly golden. Remove the rolls from the skillet and spread a layer of refried beans on each half, then top with shredded Manchego cheese. Set aside.

Make the salsa by finely chopping the tomato, onion, green chiles, and cilantro. Mix well to combine all the ingredients.

Microwave the prepared rolls for 1 minute to melt the cheese. Top with the salsa and serve.
