Ingredients

  1. Cooked potatoes
  2. 6guajillo chiles
  3. 2 cupswater (about 480 ml)
  4. 2 clovesgarlic
  5. 1/8onion
  6. 1/2 tablespooncumin
  7. 1/2 tablespoonsalt, or to taste
  8. Tortillas
  9. Sour cream
  10. Cheese of your choice

Steps

  1. 1

    Mash the potatoes and fry them in oil.

    Remove the stems and seeds from the guajillo chiles, then soak them in warm water.

  3. 3

    Blend the soaked chiles with onion, garlic, cumin, salt, and the water.

  4. 4

    Strain the sauce, then dip the tortillas in it.

  5. 5

    Heat a little oil in a skillet and cook the sauce-coated tortilla.

    Fill the tortilla with the mashed potatoes, roll it up, and serve with sour cream and cheese as desired.
