Mumbai Pav Bhaji

A popular snack from Maharashtra. Actually its more than a mere snack. It is a combination of different vegetables which are cooked together into a thick gravy. Served with a soft bread called pav. It is undoubtedly the best street food in Mumbai. With a spicy curry and butter toasted pav, this is an absolute favourite of people in all age groups.
Mumbai Pav Bhaji

Steps

Rinse, peel and chop all the vegetables. Boil all the vegetables in a pressure cooker. Save the water for later use.

In a pan, add butter, as soon as it melts add in the chopped onions.

After it becomes translucent, add ginger-garlic paste. Mix and cook till the raw smell goes away.

Add in the chopped tomatoes.

Then add salt, turmeric powder, coriander powder and red chilli powder. Mix everything together and cook for a few minutes.

Add the boiled vegetables except for potato.

Mix everything and cook for another few minutes. Add pav bhaji masala.

Then add boiled potatoes.

Using a potato masher, mash all the vegetables. As soon as the bhaji or gravy starts to dry, add the water in which the vegetables were boiled. Then let it simmer for 3 to 4 minutes. Remove from heat as soon as the bhaji thickens up.

Add lemon juice and serve with toasted pav.

Pavs are nicely toasted in butter and I have added a dollop of butter on top of the bhaji.
