In a food processor, add walnuts, spices, raisins and pulse.

Add in dates, a few at a time until it's crumbly but holds together.

Add in carrots, pulse a bit more to combine.

Continue pulsing and add coconut.

If the mixture isn't holding together, add more dates.

Roll into 1"-1.5" diameter balls. For extra flair, roll in coconut oil.

Because of carrots, store these in the refrigerator.
